雜糧在黃酒釀造中的應(yīng)用
摘 要:黃酒是我國一種古老的釀造酒之一,為了提高黃酒的保健作用,許多研究者使用一些營養(yǎng)保健價值更高的雜糧作為黃酒釀酒原料,從而豐富了黃酒的品種。本文分析了雜糧中的活性成分和保健作用,對雜糧黃酒的釀造工藝、功能因子和保健作用進(jìn)行分析總結(jié),展望了雜糧黃酒未來的發(fā)展方向。

Application of Coarse Cereals in Huangjiu Brewing

Abstract: Huangjiu is one of the ancient brewed wines of China, in order to improve the health benefits of Huangjiu, many researchers use coarse cereals with higher nutritional and health value as raw materials for Huangjiu brewing, thus increasing the variety of Huangjiu. This paper analyzes the active ingredients and health benefits in coarse cereals; analyzes and summarizes the brewing process, functional factors and health care effects of coarse cereals Huangjiu, and looks forward to the future development direction of coarse cereals Huangjiu.
