不同貯藏溫度對(duì)刺梨原汁中維生素C含量的影響

摘 要:利用2,6-二氯靛酚滴定法測(cè)定刺梨原汁中的維生素C含量,分析不同貯藏溫度對(duì)刺梨原汁的維生素C含量的影響。結(jié)果表明,刺梨原汁的維生素C含量受溫度影響較大,在冷凍條件下其維生素C含量相對(duì)穩(wěn)定,但隨著貯藏時(shí)間的增加,維生素C含量明顯下降,且溫度越高,下降越多。

The Effects of Vitamin C in Rose roxburghii Trat Juice in Different Storage Temperature

Abstract: The purpose of this study was designed to determine the content of vitamin C in Rose roxburghii Tratt juice by the methods of 2,6-dichloro-indophenol titration, and to evaluate the effects of different storage temperatures on the content of vitamin C in Rose roxburghii Tratt juice. The results clearly showed that the content of vitamin C in Rose roxburghii Tratt juice was greatly affected by temperature, and the sampled levels were relatively stable under freezing conditions. However, the content showed a significant downward trend as the storage time increased, there would be a higher temperature and hence lower content.
