基于GC-MS的黃酒檢測應(yīng)用概況
摘 要:氣相色譜-質(zhì)譜聯(lián)用儀可用來分析黃酒中各類風(fēng)味物質(zhì)和微量成分等。本文綜述了黃酒風(fēng)味感官及物質(zhì)檢測方法的研究進(jìn)展,分析了氣相色譜-質(zhì)譜聯(lián)用儀在黃酒中的特征風(fēng)味成分物質(zhì)、安全控制及不同年份黃酒指紋圖譜建立中的應(yīng)用。

Application of GC-MS in the Determination of Components in Huangjiu

Abstract: GC-MS can be used to analyze various flavor substances and trace components in Huangjiu. This paper reviews the research progress of flavor, sensory and substance detection methods of Huangjiu, and analyzes the application of gas chromatography-mass spectrometry in the characteristic flavor components, safety control and fingerprint establishment of Huangjiu in different years.
