Comprehensive Evaluation of Nutritional Value of Hainan Costus speciosus

Abstract: In this paper, the effects of diferent treatment methods on the contents of water,protein,fat, total acid,nitriteandmulti-elementin Costusspeciosuswereanalyzed.Theresultsshowedthatcomparedwith the fresh samples,the water contentofCostus speciosus increased after boiling or soaking,but the fat content was relatively stable,andthecontents ofNa,Mg,Kand trace elements decreased.Harmful elementsand nitrite were notdetected in the three treatment methods.
