Study on Microbial Contamination of Tableware in Campus Canteen and Management Countermeasures

Abstract: With the increase of public atention to food safety, it is extremely critical to accuratelycontrol the microbial polution of tableware incampus canteens.In this paper,randomsampling inspection was carriedout on the reusable tableware of thecampus canteen catering service unit in Licheng district,Jinan.The results showed that the overall qualified rate of tableware was 87.91% ,and coliform bacteriawere the main pollutants.The unqualified rates of bowls and chopsticks were 15.83% and 15.49% ,respectively. The unqualified rate of large universities is 3.33% 0 which still needs to be improved. After analysis,the main causes of polution include differences in tableware types, improper cleaning and disinfection operations,lack of personnel hygiene awareness,and lack of management and supervisionsystem. Based on this,countermeasures such as improving the system,strengthening training,optimizing the process,and improving the storage environment are proposed to provide scientific support for ensuring campus food safety and subsequent research.
