Microbial Contamination in Food Processing and Its Prevention and Control Measures

Abstract: Microbial contamination in food processng is a core problem that threatens food safety.This paper systematically analyzed the dynamic transmission mechanism of polltion path ofrawmaterial polution,production environment pollution and personnel pollution,revealed the impact of microbial polution on food sensory and food shelf life,and proposed measures to strengthen the management of processing environmental sanitation,carry out anti-corrosion treatment offood raw materials,establish food packaging safety control systemand strictlycontrol the pollution in the processing process,inorder to improve the preventionandcontrol effciencyof microbial pollution.
