Investigation and Analysis of a Foodborne Disease Outbreak Caused by Salmonella

Abstract: Objective: To investigate and deal with an outbreak of foodborne diseases in a pastry shop in Fuyang district,Hangzhou,andto identify thecause and provide abasis for the preventionand controlof similar incidents.Method: Casesearch andcase investigation were carredout to analyze theclinicalcharacteristicsof cases. Conduct case-control studies to screen for suspicious pastries;on-site hygiene investigation was conducted,and anal swab specimens ofcases and practitioners,pastry fod (raw materials),and processing utensils were collected for pathogenic detection and drug susceptibility analysis.Result: A total of 3l cases were found in this event,and the main symptoms were diarrhea( 100.0% ,abdominal pain (77.42%) ,fever (70.97%) ),andheadache (38.71% ).The epidemic curve suggested point source exposure,and soymilk egg tart (p<0.001 , OR=35.438 ) was a risk factor for the disease.Salmonell enteritidis was detected in8cases,includinganal swab specimens,1soymilk egg tart (provided by the case), (shell) and 1 processing appliance smear specimen (egg beater),and the serotyping results were allO:9,12;H:g,m,and consistent with susceptibilityresults. Conclusion: This incident was caused bySalmonella enteritidis contamination,andit is necessary todoa goodjob inthe preventionand controlof infection inchickens or laying hens,strengthen the food hygiene supervisionand management of thecatering industry,and scientifically and effectively prevent the occurrence of foodborne diseases.
