Abstract: As a necessity in people's daily life,the quality of edible oil is not only related to the health of consumers,but alsoaffects the sustainable developmentofrelated industries.This article systematicall sortsout the key factors affecting thequalityofedibleoil,includingraw material quality,procesing technology,storageand transportationconditions,and packaging materials,and specifically proposes a full-chainquality control strategy from raw material screening to terminal packaging,aiming to provide a theoretical reference for improving the safety and stability of edible oil.
