Research on the Detection Methods of Quality and Safety Risk Indicators of Edible Vegetable Oils

Abstract: With the increasing global attention to food safety and nutritional health,vegetable oil,as an important component of daily diet, has received widespread attntion for its quality control. During the production and processing of vegetable oil,contamination may occur due to factors such as raw material selection,production process,storage conditions,or transportation. These forms of pollution mainly include excessive heavy metals, pesticide residues,aflatoxin pollution,abnormal fattyacid composition,and excessive peroxide values.This article systematically introduces the detection techniques and methods of relevant indicators for various types of polution caused by edible vegetable oil,and provides a comprehensive technical summaryand development direction outlook for the quality control of vegetable oil.
