Abstract: Fast, accurate,and non-destructive testing technology has become a key requirement in the food industry.Spectral technology has been widelyused in the field offood testing due to itshigh efficiency, nondestructive nature,and ability to simultaneously detect multiple components.This article reviews the principles of near-infrared spectroscopy, infrared spectroscopy,Raman spectroscopy,fuorescence spectroscopy,and hspectral imaging technologies,and explores the current application status of spectroscopic technology in food ingredient analysis,adulterationidentification,and pollutant detection.Atthesame time,itanalyzes thechallenges it faces and future development trends.
