The Impact of Picky Eating Behavior on Nutrient Intake in Children and Food-Based Intervention Strategies

Abstract: The picky eating behavior of children has a significant negative impact on nutrient intake, manifested as an imbalance in the intake of macronutrients, micronutrients,and dietary fiber. Insuffcient protein intake leads to delayed growth and development,as wellas weakened immunity in children; imbalance between carbohydrate and fat intake leads tofuctuations in blood sugar levels,increasedriskof obesityandchronic diseases; vitamindeficiency damagesvision,immunity,andbone health; shortcomings inmneral intakeaffctbone development,hematopoietic function,and intelectual development; insufficient intakeof dietary fibercan lead to intestinal dysfunction and dysbiosis of the microbiota.In response to pickyeating behavior,this article proposes aseries offood intervention strategies,including optimizing the presentation of protein foods,regulating carbohydrate and fat supply,enriching vitamin food supply pathways,supplementing mineral fod sources,and innovating dietary fiber food processing methods.The aim is to improve the taste,appearance,and consumption offood,enhance children'sacceptanceof various nutritious foods, ensure their balanced nutrient intake,and promote healthy growth.
