Abstract: In recent years,sweeteners in food have gradually atracted widespread attention from global consumers,becomingahottopic atthe intersection of the food industryand the fieldof health.This articlereviews the latest research progress inthe field of sweeteners in food,focusingon their clasification system,detection methods,the current application status and safety of common sweeteners, with the aim of providing a reference for the research of influence of sweeteners in food on human health.
