Abstract： With the rapid development of the pre packaged food industry， ready-to-eat prefabricated dishes are highlyfavored by consumers due to their convenience，but the risk of microbialcontamination has become a key factor restricting the healthy development of the industry.This article focuses on the supply chain of ready-to-eat prefabricated dishes，deeply analyzes the microbial contamination risks in various links such as raw material supply， processing，storage，transportation，and sales，and proposes a complete microbial contamination risk monitoring systemconstruction strategy，including building a fullchain monitoring index system， integrating multiple monitoring technologies，laying outathree-dimensional monitoring network，and establishing a data-driven risk asessment and warning mechanism.Research hasshown that this systemcan efectively identify，evaluate，and prevent microbial contamination risks，providing theoretical and practical support for ensuring the quality and safety of ready-to-eat prefabricated dishes and promoting the standardized development of the industry.
