可微波冷凍預(yù)油炸食品的研究進(jìn)展

摘要:可使用微波爐重新加熱的冷凍預(yù)油炸食品是目前最受消費(fèi)者青睞的調(diào)理食品之一,但其加工過程中仍存在著許多問題。文章綜述了預(yù)油炸食品在油炸、冷凍貯藏和微波復(fù)熱三道工序中的品質(zhì)控制以及改良措施,以期為可微波預(yù)油炸食品的加工提供參考。

Abstract: Frozen pre-fried foods which can be reheated in microwave ovens are one of the most popular prepared foods for consumers at present, but there are still many problems in their processing. In this paper, the quality control and improvement measures of pre-fried foods in the three processes of frying, frozen storage and microwave reheating are reviewed, in order to provide references for the processing of microwaveable pre-fried foods.
