Abstract：ArticialIntellgence（A）techologyisdrivingaprofoudtransfomationineducation.TheappicationofAItec nologyinundergraduateteachingwillbreakthetraditionalteacher-centeredapproachbringingewopportunitiesandchallenges forteachinginnovation.ThisstudysystematicallyexploresthecurrentaplicationofAItechnologyinundergraduatenution teaching，focusingonteanalysisofemergingtechnologiessuchaspersonalizedleaning，inteligentteachingplatforms，augmentedrealityandvirtualrealityechnologyinighereducationeaching.Itrevealstesignificantadvantagesofthsetecholgies inimprovingteachingqualityandstudentlearingoutcomesintermsofintellgenttutoring，clasroommanagement，andeiching leamingresources.BasedonthechallengesfacedbytheaplicationofAIinundergraduatenutritionteaching，suchasinsufficientteacherAIliteracyandimperfectasessmentandfedbackmechanisms，thisarticleproposesinnovativeapplicationpathsincludingtheconstructionofpersonalizedlearningand teachingdecision-making，AI-supportedinteractivelearningmodels，andthe development of AI-assisted intelligent teaching platforms.
