摘 要：近年來(lái)黃鱔食品行業(yè)迅速發(fā)展，黃鱔食品的安全問(wèn)題也越來(lái)越受到人們的重視。本文闡述了黃鱔的養(yǎng)殖技術(shù)、黃鱔食品的運(yùn)輸與加工、黃鱔食品安全現(xiàn)狀以及黃鱔常檢指標(biāo)的檢驗(yàn)方法，旨在為黃鱔的檢驗(yàn)檢測(cè)事業(yè)的發(fā)展提供參考。

Detection Index and Method of Monopterus albus Food

Abstract： With the rapid development of Monopterus albus food industry in recent years， the safety of Monopterus albus food has been paid more and more attention. This paper describes the breeding technology of Monopterus albus， the transportation and processing of Monopterus albus food， the current situation of food safety of Monopterus albus and the inspection method of the regular inspection index of Monopterus albus， in order to provide a reference for the development of the inspection and detection cause of Monopterus albus.
