摘 要:本文根據(jù)橫縣魚生加工的過(guò)程,通過(guò)危害分析,確定橫縣魚生加工過(guò)程的關(guān)鍵控制點(diǎn),并給相應(yīng)的關(guān)鍵控制點(diǎn)提出對(duì)應(yīng)的預(yù)防控制措施,建立橫縣魚生加工過(guò)程的HACCP管理體系,可將食品安全危害風(fēng)險(xiǎn)降到最低,以保證橫縣魚生產(chǎn)品的質(zhì)量,確保消費(fèi)者的飲食安全。

Application of HACCP in Hengxian Yusheng Processing

Abstract: According to the process of Hengxian Yusheng, this paper determines the key control points of Hengxian Yusheng processing through hazard analysis, and puts forward corresponding prevention and control measures for the corresponding key control points. Establishing the HACCP management system of processing of Hengxian Yusheng can reduce the food safety hazards to the lowest level, so as to ensure the quality of Hengxian Yusheng products and ensure the food safety of consumers.
