Abstract： Food security is an important component of national security. Heavy metal pollution seriously threatens the quality offood and human health.This paper elaborates on the key points of heavy metal detection in food indetail，systematically introduces the principles，characteristicsand application situations ofcommondetection methods for heavy metals in food，aiming to provide theoretical support and technical reference for ensuring food quality and safety and improving the accuracy and reliability of heavy metal detection.
