Optimization of Extraction Technology of Blueberry Anthocyanins

Abstract: Using blueberries as the research object, ultrasound asisted ethanol extraction method was used to extract anthocyanins from blueberries.On the basis of single factor experiments,the extraction processof blueberry anthocyanins was optimized through orthogonal experiments with anthocyanin yield as the evaluation criterion.The results showed that when the ethanol concentration was 70% , the ultrasound time was 50min ,the solid-liquid ratio was 1:15(g:mL) , and the ultrasound power was 300W ,the yield of blueberry anthocyanins was the highest, at 9.37mg.g-1 :
