海參肽功能特性研究進展

摘 要：海參肽是以海參蛋白為原料，通過不同生產(chǎn)工藝制備得到的一種海參生物活性肽，具有抗氧化、抗疲勞以及神經(jīng)保護等多種功能活性。本文綜述了海參肽的生物學(xué)功能特性，以期為海參肽的進一步開發(fā)利用提供一定的參考價值。

Abstract： Sea cucumber peptide is a kind of sea cucumber bioactive peptide prepared from sea cucumber protein through different production processes， which has various functional activities， such as antioxidant， anti-fatigue and neuroprotection. This paper reviews the biological functional characteristics of sea cucumber peptides， in order to provide certain reference value for the further development and utilization of sea cucumber peptide.
