摘 要:隨著人們生活節(jié)奏的加快,快捷、方便、高效的預(yù)制菜成為人們飲食追求的主流。水產(chǎn)品預(yù)制菜產(chǎn)業(yè)發(fā)展空間大,市場(chǎng)需求量大,但受微生物的影響,存在一定的食品安全問題。本文結(jié)合水產(chǎn)品預(yù)制菜的產(chǎn)業(yè)現(xiàn)狀,分析水產(chǎn)品預(yù)制菜微生物污染的狀況及影響因素,為水產(chǎn)品預(yù)制菜產(chǎn)業(yè)的安全、健康發(fā)展路徑探索提供參考。

Abstract: As people’s pace of life accelerates, quick, convenient, and efficient pre-made dishes have become the mainstream pursuit of national dietary. Development space for the pre-made dishes industry is large, and the market demand is high. However, due to the influence of microorganisms, it faces food safety. This article combines the current state of the pre-made dishes industry to analyze the situation and influencing factors of microbial contamination in pre-made dishes. It provides a reference exploring the path of safe and healthy development of the pre-made dishes industry.
