摘 要:食品中常見致病菌種類多,因此開展常見致病菌檢測是食品安全工作的重要環(huán)節(jié)。本文簡單分析了當(dāng)前常用的檢測技術(shù)傳統(tǒng)生化檢測方法、免疫酶檢測技術(shù)、PCR技術(shù)、基因芯片技術(shù)的發(fā)展應(yīng)用及不足,為食品中常見致病菌檢測技術(shù)的應(yīng)用提供參考。

Analysis of Technical Problems in the Detection of Common Pathogenic Bacteria in Food

Abstract: There are many types of common pathogenic bacteria in food, so carrying out the detection of common pathogenic bacteria is an important part of food safety work. In this paper, we briefly analyze the development and application of the current commonly used detection technologies traditional biochemical detection methods, immunoenzymatic detection technology, PCR technology, and gene chip technology and their shortcomings to provide a reference for the application of common pathogenic bacteria detection technology in food.
