摘 要:玉米肽是由玉米蛋白經(jīng)特定酶水解成的小分子肽鏈,保留了部分氨基酸序列,有良好的溶解性與生物活性。本文探究了與金屬離子螯合、糖基化及與其他物質(zhì)復合等生物化學改性方法,并闡述改性后玉米肽在促進營養(yǎng)元素吸收、抗氧化以及解酒方面的生物活性,為玉米肽的研究提供參考。

Abstract: Corn peptides are formed by specific enzymatic hydrolysis of corn protein into small molecule peptide chains, retaining some amino acid sequences and exhibiting good solubility and biological activity. This article explores biochemical modification methods such as chelation with metal ions, glycosylation, and complexation with other substances, and elucidates the biological activities of modified corn peptides in promoting nutrient absorption, antioxidation, and sobering up, providing reference for the research of corn peptides.
