摘 要:沙門氏菌是一種廣泛存在于食品中可感染人和動物的病原菌,沙門氏菌中毒在我國食源性中毒案例中占比較大。因此,控制好沙門氏菌的感染與傳播至關(guān)重要。本文對沙門氏菌的生理學特性、分類、檢測方法和防治辦法進行探究,為防治食源性致病菌提供理論依據(jù)。

Abstract: Salmonella is a pathogen that widely exists in food and can infect people and animals. Salmonella poisoning accounts for a large proportion of food borne poisoning cases in China. Therefore, it is very important to control the infection and transmission of Salmonella. This paper explores the physiological characteristics, classification, detection methods and control methods of Salmonella, so as to provide a theoretical basis for the control of foodborne pathogens.
