摘 要:納米酶作為天然酶的潛在替代物,具有制備簡(jiǎn)單、無(wú)需純化、成本低及穩(wěn)定性好等優(yōu)勢(shì),已廣泛應(yīng)用于生物傳感、環(huán)保、疾病診斷和治療等領(lǐng)域,在食品安全快速檢測(cè)方面也扮演了關(guān)鍵角色。本文系統(tǒng)地介紹了近年來(lái)納米酶在食品安全檢測(cè)領(lǐng)域的最新研究進(jìn)展,并分析了納米酶在食品檢測(cè)中面臨的挑戰(zhàn)。

Application and Prospect of Nanoenzymes in Rapid Detection of Food Safety

Abstract: As a potential substitute for natural enzymes, nano-enzymes have the advantages of simple preparation, no purification, low cost and good stability. They have been widely used in biosensors, environmental protection, disease diagnosis and treatment. Among them, they also play keys role in the rapid detection of food safety. This paper systematically introduces the latest research progress of nano-enzymes in the field of food safety detection in recent years, and analyzes the challenges faced by nano-enzymes in food detection.
