富硒食品的研究進(jìn)展

摘 要:硒是人體所必需的微量元素之一,對(duì)癌癥和神經(jīng)系統(tǒng)等疾病的防治具有一定的作用。我國(guó)的富硒食品主要包括富硒大米、肉制品、雞蛋、茶、酵母以及食用油等。人體長(zhǎng)期硒缺乏,會(huì)影響身體健康。基于此,本文綜述了富硒食品的生理學(xué)功能、食品類別、常見(jiàn)的市售富硒食品以及富硒食品的研究現(xiàn)狀。

Research Progress on Selenium-Enriched Food

Abstract: Selenium is one of the essential trace elements of human body, and has certain effects on the prevention and treatment of diseases such as cancer and nervous system. Selenium-rich foods in China’s mainly include selenium-rich rice, meat products, eggs, tea, yeast and edible oil. The lack of selenium in human body for a long time will affect health. Based on this, the physiological function, food categories, common commercial selenium-rich foods and research status of selenium-rich foods were reviewed in this paper.
