湖南省即食魚豆腐加工的關(guān)鍵控制點(diǎn)研究
摘 要:即食魚豆腐是近幾年在湖南省內(nèi)興起的一種休閑零食,具有良好的感官風(fēng)味而深受消費(fèi)者喜愛。本文闡述了即食魚豆腐的生產(chǎn)工藝流程,并對即食魚豆腐的加工關(guān)鍵點(diǎn)進(jìn)行了簡要介紹,分析了影響工藝的關(guān)鍵參數(shù)及原因。

Abstract: Instant fish tofu is a kind of popular leisure snack which has a good sensory flavor in Hunan province in recent years. In this paper, the process of instant fish tofu production in Hunan province is reviewed, the processing technology of instant fish tofu is briefly introduced, and the key parameters and reasons affecting the process are put forward.
