特殊膳食用食品中膽堿的檢測(cè)研究進(jìn)展

摘 要：膽堿是一種重要的水溶性微量營(yíng)養(yǎng)素，通常被歸為類維生素，它對(duì)維持細(xì)胞結(jié)構(gòu)和功能以及神經(jīng)遞質(zhì)乙酰膽堿合成至關(guān)重要。膽堿在特殊膳食用食品中有嚴(yán)格的添加要求，準(zhǔn)確測(cè)定極其重要。本文對(duì)國(guó)內(nèi)外特殊膳食用食品中膽堿檢測(cè)方法中樣品處理、儀器、試劑、自動(dòng)化程度等進(jìn)行比較分析，以期為檢測(cè)人員提供理論指導(dǎo)。

Abstract： Choline is an important water-soluble micronutrient that is often classified as “vitamin-like.” It is critical for cell membrane structure and function and in synthesis of the neurotransmitter acetylcholine. Choline has been added in foods for special dietary users with a strict limitation to the amount of addition. Thus， accurate determination of choline has great significance. In this paper， the sample treatment， instrument， reagent and automation of the method for determination of choline in foods for special dietary users are brieflfly presented， so as to provide a reference for testing personnel.

特殊膳食用食品是為滿足特殊的身體或生理狀況和（或）滿足疾病、紊亂等狀態(tài)下的特殊膳食需求，而專門加工或配方的食品，包括嬰幼兒配方食品、嬰幼兒輔食食品、特殊醫(yī)學(xué)用途配方食品以及其他特殊膳食食用食品（輔食營(yíng)養(yǎng)補(bǔ)充品、孕婦、乳母營(yíng)養(yǎng)補(bǔ)充食品等）[1]。（剩余7367字）
