Application of Corn Dietary Fiber in Food Processing

Abstract: As an important food crop in the world,the dietary fiber in the by-product of corn is widely used in food processing because of its good nutritional value and functionality. Dietary fiber is mainly divided into soluble and insoluble,which has a varietyof physiological functions such as improving intestinal health,preventing cardiovascular and cerebrovascular diseases,and lowering blood sugar.In this paper,the composition,function and application of maize dietary fiber in food processing were introduced,aiming to provide theoretical basis and technical support for the food processing of maize dietary fiber.
