Abstract: Hazard analysis and critical control point (HACCP) is an advanced management method for ensuring food safety. The application of HACCP system in the production process of Baijiu enterprises can significantly improve the level of product safety and ensure product quality.This paper expounds the principle and characteristics of HACCP,analyzes its specific application inthe production ofBaijiu enterprises,and provides a reference for the sustainable development of Baijiu industry.
