摘 要：本文通過認真總結(jié)西餐飲食特點，從原料、味道、烹飪、造型、食品安全以及服務等方面出發(fā)，系統(tǒng)梳理西餐對中菜烹飪的影響，旨在采取有效舉措，大力推進烹飪技術創(chuàng)新。
