摘 要:果蔬類(lèi)食品貨架期是消費(fèi)者了解果蔬品質(zhì)的重要途徑。果蔬變質(zhì)過(guò)程較為復(fù)雜,是多種因素共同作用的結(jié)果。因此,本文介紹了與果蔬類(lèi)食品品質(zhì)相關(guān)的微生物指標(biāo)、理化指標(biāo)和感官指標(biāo),總結(jié)并分析了5種不同類(lèi)型的貨架期預(yù)測(cè)方法及其研究進(jìn)展,展望了未來(lái)研究趨勢(shì),進(jìn)一步保障食品安全和消費(fèi)者健康。

Abstract: The shelf life of fruits and vegetables is an important way for consumers to assess their quality. The deterioration process of fruits and vegetables is complex, resulting from the interplay of various factors. Therefore, this paper introduced the microbiological indicators, physicochemical indicators and sensory indicators related to the quality of fruits and vegetables, summarized and analyzed 5 different types of shelflife prediction methods and their research progress, while also looking ahead to future research trends to further ensure food safety and consumer health.
