納米纖維素在Pickering乳液中的研究進展
Abstract:Compared with traditional emulsions,Pickering emulsions have atractedextensive atentionowing to their excellent stabilityandadjustable permeability.Among thevarious solid particles thatstabilizePickering emulsions,celulose nanocrystals exhibit excellent properties,suchasgoodbiocompatibilityamphiphilicproperties,highcrystallnityandlarge aspectratio,showing great potential inthefieldofemulsions.Thisreviewintroduces thesources andpreparationmethodsof cellulose nanocrystals,aswellastheapplicationsofckeringemulsionsandtherelatedresearchprogres.Theeectsofthe sourcesand preparation methods on the structural characteristicsofcellulosenanocrystalswere summarized,and the influence ofthe celulose nanocrystal structure on the stabilityof the Pickering emulsions was analyzed.Research progress onPickering emulsions basedoncellose nanocrystals inthefood field wasreviewed topromote the designoffunctional emulsion food products and the development of processing technology for emulsion foods.
