Abstract：Due to theextensive useofagricultural chemicals suchas fertilizers，pesticides and feedadditives，and the discharge ofindustrial wastes inmining，smelting，chemicalindustryandelectronics，alarge amountofecological environment has been destroyed，and a series ofquality and safety problems of agricultural products have been generated. Heavy metal residues of varying degrees have been found in fish，animal organs，rice， wheat and vegetables. Thequality and safety of agricultural productshas becomea focus ofattention.Basedon this，from the perspective of risk assessment，this paper analyzes the standards optimization methods of heavy metal detection in food and agricultural products， which is expected to play a role of reference.
