Optimization of Ultrasonic-Assisted Extraction Process of Anthocyanin from Passion Fruit Peel and Study on Its Properties

Abstract: In order to further utilize the anthocyanin resources of passion fruit peel, purple passion fruit pel is used as the raw material to extract anthocyanins using ultrasonic-assisted extraction method. The extraction process of anthocyanins from passion fruit peel is optimized through single factor experiment and orthogonal experiment. The antioxidant activity of diferent concentrations of extractedanthocyanins under the optimal conditions is evaluated by measuring the hydroxyl radical scavenging ability,DPPH radical scavenging ability and iron ion reducing power. At the same time,the stability of anthocyanins under different pH and organic acid conditions is studied. The results show that the optimal extraction process is ultrasonic power of 300W ,ultrasonic time of 30min ,ethanol concentration of 40% ,and liquidsolid ratio of 40:1 . Under these conditions,the extraction yield can reach 6.13mg/g pH has a greater effct on the stability of anthocyanins,and anthocyanins are more stable in acidic environment and the most stableat pH1 .Citric acid and oxalic acid are most beneficial for the preservation of anthocyanins at the concentration of 80g/L , and the addition of citric acid is more conducive to the stability of anthocyanins than oxalic acid. Anthocyanins have the ability to scavenge DPPH and hydroxyl radicals,and have a certain iron ion reducing power,indicating that anthocyanins of passion fruit peel have certain antioxidant effects.
