Study on Effect of Ultrafine Grinding on Quality and Processing Characteristics of Celery Leaf Powder

Abstract: Celery leaves are rich in a variety of nutrients,and the content of vitamin C,total phenols and flavonoids incelery leaves is higher than thatin the stems.Atthe same time,celery leaves contain a large amount of acidic components and have the efect of calming liver and lowering blood pressure.But because celery leaves are easy to rot,the storage period is shorter,and the utilization rate is lower,leading to the waste of resources. In this experiment,instant celery leaf powder is prepared using celery leaves as the raw materials,and the optimal pretreatment conditions are determined by studying the efects of pretreatment conditions such as citric acid addition amount,soaking time,blanching temperature and blanching time on the color protection efect of celery leaves. Under the optimal pretreatment conditions,ultrafine grinding is conducted on celery leaves to investigate the effects of ultrafine grinding on the quality and processing characteristics of celery leaf powder. The results show that the optimal pretreatment conditions for celery leaves are the addition amount of citric acid of 0.85% ,soaking time of 5min ,blanching temperature of 90°C and blanching time of 1.6min . Under the optimal pretreatment conditions,when the celery leaves are crushed to 30O mesh by ultrafine grinding,the celery leaf powder products with good quality and high instant rate can be obtained.In this study,celery leaf resources are fully utilized,which has provided a theoretical basis for the deep processing of celery leaves and the development of new products.
