煙葉醇化過程潛香物降解規(guī)律研究進(jìn)展

摘要煙草潛香物質(zhì)是影響香氣品質(zhì)的重要指標(biāo)，煙葉關(guān)鍵的潛香物質(zhì)主要來源美拉德反應(yīng)物、類胡蘿卜素、賴百當(dāng)類、西柏烷類和糖苷類。在煙葉及卷煙生產(chǎn)過程中，醇化是煙葉產(chǎn)生香氣的最關(guān)鍵步驟，綜述了上述幾種潛香物質(zhì)的醇化降解規(guī)律，對未來煙草醇化過程研究做出展望。

Research Progressi on the Degradation Law of Latent Flavor in Tobacco Leaf Alcoholization

AbstractTobacco latent aroma substances are important indicators that affect aroma quality. The main sources of key latent aroma substances in tobacco leaves are Maillard reaction， carotenoids， labradans， cembranes and glycosides. In the production process of tobacco and cigarettes， aging is the most critical step for tobacco to produce aroma. This article reviews the aging and degradation laws of the above-mentioned latent aroma substances， and makes a prospect for the future tobacco aging process.
