富硒猴頭菇中硒含量分布和賦存形態(tài)研究

摘要 研究了富硒猴頭菇中硒的含量分布和賦存形態(tài)，結(jié)果表明，猴頭菇中總硒含量為205.98 μg/g，其中有機硒含量占總硒的91.39%，而有機硒中最主要的賦存形態(tài)為蛋白硒，含量占有機硒的66.18%，其次是多糖硒和其他有機硒，占比分別為18.90%和14.30%，另有少量的核酸硒。

Abstract The content distribution and combined forms of selenium in selenium-enriched Hericium erinaceus were studied.The results showed that the content of total selenium in Hericium erinaceus was 205.98 μg/g，in which the content of organic selenium accounted for 91.39% of the total selenium.The main form of organic selenium was protein selenium，which accounted for organic selenium 66.18%; followed by polysaccharide selenium and other organic selenium，which accounted for organic selenium 18.90% and 14.30% respectively，and there was also a small amount of nucleic acid selenium.
