鯽魚魚鱗結構與有效成分的研究進展

摘要鯽魚是一類重要的經濟型食用魚,不僅肉質鮮美,魚鱗也有極高的利用價值。從鯽魚魚鱗的結構以及鯽魚魚鱗膠原蛋白等有效成分的提取方法、鯽魚魚鱗抗菌活性肽的制備方法以及魚鱗的應用等方面總結了鯽魚魚鱗結構與有效成分的研究進展,旨在為鯽魚魚鱗的深加工與進一步優(yōu)化利用提供參考。

AbstractCrucian carp is an important economic food fish,not only its meat is delicious,but also its scales have high utilization value.This paper summarizes the research progress on the structure and effective components of Carassius auratus fish scales from the aspects of the structure of fish scale and the extraction methods of effective components such as collagen of Carassius auratus fish scales,the preparation methods of antibacterial active peptides of Carassius auratus fish scales and the applications of fish scales,aiming to provide reference for the deep processing and further optimization of the utilization of Carassius auratus fish scales.
