摘 要:中草藥含有多種生物活性成分, 包括多酚、生物堿、多糖等, 具有抗氧化、抗炎、抗菌等功能。中草藥不僅能促進動物健康, 還能改善肉品質和風味, 對飼料工業(yè)和人類健康具有重要意義。該文綜述了中草藥的特點、中草藥在改善豬肉品質中的應用, 以期為中草藥改善豬肉品質的研究提供參考。

Abstract: Chinese herbal medicine contains various bio?active compounds, such as polyphenols, alkaloids, polysaccharides, thanks to which Chinese herbal medicine has many pharmacological effects for example antioxidant, anti?inflammatory, and antibacterial. Chinese herbal medicine not only promotes animal growth and health, but also improves meat quality and flavor, which is of great significance to the feed industry and human health. This article reviews the characteristics of Chinese herbal medicine and its application in pork quality, in order to provide reference for further research on the effect of Chinese herbal medicine on meat quality.
